Roasted Spaghetti Squash w/ sun dried tomato pesto
Serves 2-3
Ingredient Amount
Spaghetti Squash 1 medium size
Olive oil 2 tbsp
Salt 1 tbsp
Pepper 1 tbsp
Sun dried tomato pesto 1/2 cup
Method of prep
Split squash length wise. Remove all seeds and connected flesh (just like a pumpkin). Drizzle oil, salt and pepper. Place in a preheated 300 degree oven for approx. 15 mins. When fork tender remove from oven. Let cool. Scoop out the spaghetti squash with spoon. In a hot sautee pan add a little olive oil. Then add squash, bring to temparture add s.d. tomato pesto. Heat thru adjust seasonings to taste. Serve hot
Sun Dried tomato pesto

Sun Dried Tomatoes 3 oz
Pine nuts 2 tbsp
Parmesan 1 oz
Olive oil 1/8 cup
Salt and Pepper To Taste
Method of prep
In food processor add all ingredients. Blend until smooth. Chill
